Does the "Auto Folding Mirrors" selection from the User Interface do anything?
The mirrors do fold with the button and the keyless fob. My hope was that setting it from the UI would automatically fold/unfold them when the car locked or unlocked.

Any experience with this?

We have a 2018 model. It's the same as you describe for your 2019. Mirrors will not auto fold when lock/unlocking. I was hoping they would but after thinking about it's most likely best not. Think how many times the folding motor/gears would exercise to fold each time to unlock or lock. The longevity would be shortened considerably. I'm sure GM recognized this and designed it this way to keep them off the hook for warranty repairs.

In the 2018 settings, you can set the mirrors to fold, or not when the engine starts or shuts down. I find it unnecessary and keep it off, but I have used the door button to fold them on occasion when pulling into a narrow garage.

I just bought a 2018 with this feature. The way it works is you set it in the UI but control it from the RKE ( key FOB). when the car is off you hold the lock button for 2 seconds and then they fold. If you hold the unlock button they unfold. I have tested the remote folding and it works but not the remote un- folding.

Where's the setting to STOP the windows from going down when I hold down the unlock on the fob to unfold the mirrors?

I can't get an honest reply on this from Buick. Many cars mirrors fold back when the car is turned off which makes sense in crowded parking lots and in the setup Buick has this option so I set it to do that. According to two separate service techs it's not supposed to do that as you still have to fold the mirrors back with the button on the door or once you get out of the car hold the master key fob button down. This doesn't make sense as why bother the have the setting in "setup" to fold back mirrors automatically. So when driving and stopping my Enclave 50% of the time the mirrors will fold in when the car is turned off meaning that's what it's supposed to do. However, none of the technicians can explain why it does that as they say it shouldn't and if it shouldn't then why does it do it. Not to be rude but have found them to be a bit ignorant on some of the settings on the car. The major one is auto sensing windshield wipers which they had no idea the car did not have which surprised me as that's standard on most rather expensive cars. So, why do my mirrors fold back when the car is shut down sometimes and not others. It's rather annoying to drive off and look down at the mirror while on the road and see the mirror folded in when I didn't do it.

So this thread started over a year ago and you are asking as a guest, so I'm going to assume you have a 2019?
Did you read page 52 of the owners manual?
Do you always use the same remote?
If not and you have memory seats/mirrors that would explain what you are experiencing.

50% of the time the mirrors fold back and techs say that shouldn't happen. Why would it continue to happen after serviced.
