01 Buick Lasabre persistent coolant leak

I have a 2001 Buick LeSabre and I keep having to put coolant in the reservoir. It's throwing a p0171 code system too lean. Here is the past work that was done on it and previous symptoms.

No code was being thrown but it was jerking when accelerating, I would hit the gas and the rpms would shoot up but the speed didn't actually change. When it did shift gears it was very rough. When starting the car the rpm would shoot up to 3 or 4 and stay there

After a week or so, the engine started to heat too quickly and too high. It would start off at normal operation range of 176 then jump to 220-230 rapidly. I checked coolant and the reservoir was bone dry. The radiator was full and last year I had the thermostat, hoses and cap replaced.

The acceleration issues were still persistent so I used chat gpt to help figure it out and I put in a new iac valve and map sensor. Afterwords the acceleration was alot better but still did it slightly. Then started throwing up the coolant temp under operating sensor. I took it back in for a pressure test but no leaks were found

After a couple months I got a tune up, new spark plugs and wires. The previous issues with acceleration came back up but stopped after a day. That's when the p0171 code came up. I added more coolant and all issues went back to normal but the code is still there.

Earlier today the overheating issues have came back up and the reservoir is almost empty again. What do y'all think it could be?
