Nearly every vehicle I've had has had condensation inside the windshield at one time or other. I've had it happen in winter after a really cold day, then a fairly warm one, then cold night. Wonderful to wake up with frost on the inside!

That said moisture got trapped in the cabin and caused the condensation. Try leaving your windows open during the day to make sure everything is dried out.
