Where does the gas mileage data on the display come from?

Does it come from the car itself, or is it an average of all 2017 (in my case) Encores on the road?

It comes from the car itself.

In the owner's manual for my 2005 it claims that "Avg MPG" is from about the last 50 miles of operation.

Short version, or as some like to say, TLDR:

The accuracy of the Avg MPG and Range To Empty will likely differ from you can manually (and accurately) measure yourself, but for a vehicle in motion, it's close enough.

If you run out of gas, it won't be because you didn't have access to information regarding your fuel level and/or RTE.
