HELP! A/C compressor won't turn on due to ambient air temp!?

Let me start by saying, the freon is full (tried to fill it), the compressor does work, etc. All indications lead me to believe it (whatever "it" is) just needs some sort of reset. I'm just hoping someone can point me in the right direction. Thanks in advance.

I recently bought a 2017 Buick Encore Sport. I haven't needed the AC much but it's starting to warm up and all I get is a face full of lukewarm air. The Buick Intellilink (OEM thingy) shows the outside temp as -40F at all times. It's May in the lower 48, so that's not right, right? So, I've read that the A/C won't blow cold air if the outside temp is cold - makes sense. But, it's not cold outside.

My first move was to replace the outside ambient air temp sensor in the bumper. It was cheap and relatively easy so why not? I finish up, start the car and crank the AC.... -40F, no cold air. So, I try disconnecting the battery for a few minutes to let things reset. Then, I start the car and the OEM reads "--" degrees. Odd, but maybe it will fix itself, I think to myself. AND FOR THAT MOMENT, COLD BEAUTIFUL CRISP AIR BLOWS. I hear the compressor is running and everything is grand. My work is done, right? Wrong. I shut the car off and clean up the tools yada yada. An hour or so later, I need to run an errand. I get in the car and the OEM reads, you guessed it, -40F. No cold air.

So, I know the freon is full, the compressor does work, I'm so close to cold air...

Help me, please.
 
Assuming the sensor has two wires, using a volt meter do you have a reading on either wire?
 
Yes 2 wires and one of them will have a sense voltage. I can't remember if it's a 10V or 5V though.Screenshot 2020-05-07 18.19.21.png

Did you check your coolant levels?

Turning on front window defrost should automatically turn on HVAC compressor!
